Grain: We made a commitment to source our ingredients as locally as possible when starting the brewery and are pleased to state that we source 100% of our base malts from New York Malt Houses.

Hops: We use only New York hops in all our beer. For our sour ales, our aroma and dry hops are locally grown in the Village of Tarrytown. We harvest several varieties at the brewery, including Cascade, Newport, and Perle.

Honey: Our wildflower honey is collected from happy bees pollinating the New York State agriculture. We source from Black Dirt Country just across the Hudson in Orange County, as well as throughout the Fingerlakes Region.

Yeast: Our non-sour ales use traditional Belgian strains to produce a variety of complex flavors representative of their style. We produce our sour ales using a unique culture of yeast and bacteria that is the culmination of over a decade of open fermentation and cultivation within the village. The end result produces flavors that are unique to our beer and specifically Tarrytown. Of all our ingredients, we are most proud of our unique yeast strain and the flavor it imparts to our unfiltered beers.
